Dark Chocolate Shredded Wheat Crumbs Brownies

These delightful brownies are pumped with fibre, so why not have two?
Ingredients
- 1/4 cup (60 mL) Shredded Wheat Crumbs
- 1/4 cup (60 mL) whole wheat flour
- 3 tbsp (45 mL) sugar
- 2 tbsp (30 mL) unsweetened cocoa powder
- 1/4 tsp (1 mL) baking powder
- 1/4 tsp (1 mL) salt
- 1 egg
- 1/4 cup (60 mL) vegetable oil
- 1 1/2 oz (45 g) dark chocolate, melted
- 1/2 tsp (2 mL) vanilla extract
- 1/2 cup (125 mL) chopped walnuts
Directions
- Preheat oven to 350°F. Grease three 3/4-cup (175 mL) ovenproof ramekins.
- In a small bowl, whisk together Shredded Wheat Crumbs, flour, sugar, cocoa powder, baking powder and salt.
- In a medium bowl, whisk together egg, oil, melted chocolate and vanilla. Fold in flour mixture. Transfer batter to prepared ramekins.
- Bake in preheated oven for 12 to 15 minutes or until slightly jiggly in centre and sides are set. Let cool slightly on a wire rack, then garnish with chopped walnuts.
Tips
- Sprinkle with sea salt before baking, if desired.
