Shredded Wheat Crumbs Broccoli Bites

These fun bites make a great starter, side dish or snack. Healthy and delicious, they will please everyone.
Ingredients
- 1/2 cup (125 mL) Shredded Wheat Crumbs
- 1 egg
- 2 cups (500 mL) finely chopped steamed broccoli
- 1 cup (250 mL) cooked mashed potato
- 1/2 cup (125 mL) grated Parmesan cheese
- 1/2 tsp (2 mL) garlic powder
- 1/2 tsp (2 mL) onion powder
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) pepper
- 3 tbsp (45 mL) olive oil, divided
Directions
- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
- In a medium bowl, combine Shredded Wheat Crumbs, egg, broccoli, mashed potato, Parmesan, garlic powder, onion powder, salt and pepper. Mix until well blended.
- Scoop a 1-1/2-tbsp portion of broccoli mixture and roll into a cylindrical tot-like shape. Place on prepared baking sheet. Repeat with remaining broccoli mixture. Drizzle evenly with 1 1/2 tbsp (22 mL) of olive oil.
- Bake in preheated oven for 10 minutes, then flip and drizzle with remaining 1 1/2 tbsp (22 mL) olive oil. Bake for another 10 to 14 minutes or until golden brown and crispy.
Tips
- Serve with ketchup, ranch dressing or hummus for dipping.
