Shredded Wheat Crumbs Turkey Meatball Bites

These juicy protein- and fibre-packed snacks also make a great starter, pizza topping or submarine filling!
Ingredients
- 1/2 cup (125 mL) Shredded Wheat Crumbs
- 1 egg
- 2 tbsp (30 mL) milk
- 1 tbsp (15 mL) Dijon mustard
- 1 lb (500 g) ground turkey
- 3 tbsp (45 mL) finely chopped parsley
- 2 tsp (10 mL) minced garlic
- 2 tsp (10 mL) salt
- 1 tsp (5 mL) onion powder
- 1 tsp (5 mL) dried basil leaves
- 1 tsp (5 mL) dried oregano leaves
- 1/2 tsp (2 mL) pepper
- 2 tbsp (30 mL) olive oil
- 1 cup (250 mL) marinara sauce, warmed
Directions
- Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper and place a greased wire rack on top.
- In a medium bowl, whisk together egg, milk and Dijon. Stir in Shredded Wheat Crumbs and let stand for 5 minutes, until mixture has moistened. Stir in turkey, parsley, garlic, salt, onion powder, basil, oregano and pepper; mix until combined.
- Shape turkey mixture into 1-1/2-inch (4 cm) balls and arrange on prepared wire rack. Brush with olive oil.
- Bake in preheated oven for 12 to 15 minutes or until golden and an internal thermometer inserted into the center of a meatball registers 165°F.
- Serve with warmed marina sauce for dipping.
Tips
- Replace ground turkey with ground chicken, pork or beef, if desired.
