Ingredients

  • 1-1/2 cups Post 100% Bran cereal
  • 1/2 cup chopped dates
  • 1/3 cup non-hydrogenated margarine
  • 3/4 cup boiling water
  • 1 egg
  • 398 ml (1/2 of 28-oz./796-ml can) pumpkin
  • 2 cups flour
  • 1/2 cup sugar
  • 1 Tbsp. baking powder
  • 2 tsp. ground cinnamon
  • 2 tsp. ground ginger
  • 1 tsp. baking soda
  • 1/2 tsp. salt

Directions

  1. Preheat oven to 350°F. Place cereal, dates and margarine in medium bowl. Add boiling water; stir until margarine is melted and mixture is well blended. Cool. Add egg and pumpkin; mix well. Mix remaining ingredients in large bowl. Add cereal mixture; stir just until moistened. (Batter will be thick.)
  2. Pour into greased 9×5-inch (23 cm x 13 cm) loaf pan.
  3. Bake 55 min. or until wooden toothpick inserted in centre comes out clean. Cool in pan 10 min.; remove from pan to wire rack. Cool completely.
