Shredded Wheat Fried Chicken

Coated in crispy seasoned Shredded Wheat Crumbs and oven-baked, this is a “fried” chicken you can indulge in any night of the week.
Ingredients
- 2/3 cup (150 mL) Shredded Wheat Crumbs
- 2 tsp (10 mL) garlic powder
- 2 tsp (10 mL) onion powder
- 2 tsp (10 mL) chili powder
- 1 tsp (5 mL) paprika
- 1 tsp (5 mL) salt
- 1/2 tsp (2 mL) pepper
- 1/3 cup (75 mL) all-purpose flour
- 2/3 cup (150 mL) buttermilk
- 6 chicken drumsticks
- 1 1/2 tbsp (22 mL) vegetable oil
Directions
- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
- In a small bowl, whisk together Shredded Wheat Crumbs, garlic powder, onion powder, chili powder, paprika, salt and pepper.
- Place flour and buttermilk in separate small bowls. In batches, coat drumsticks in flour, dip in buttermilk, then coat in Shredded Wheat mixture, pressing to adhere. Transfer to prepared baking sheet. Drizzle with oil.
- Bake in preheated oven for 35 to 45 minutes or until golden brown and a thermometer inserted into chicken registers at least 165°F.

- Pair with steamed broccoli and mashed potatoes for a comforting meal.
