Crunchy Superfoods Snack Mix
Packed with nutrition, this sweet snack mix will help you power through your day with ease.
2 cups (500 mL) Honey Shreddies
1/2 cup (125 mL) coconut flakes
1/2 cup (125 mL) pumpkin seeds
2 tbsp (30 mL) flax seeds
2 tbsp (30 mL) coconut oil, melted
1/4 cup (60 mL) dark chocolate chips
1/4 cup (60 mL) dried blueberries
- In bowl, stir together Honey Shreddies, coconut flakes, pumpkin seeds and flax seeds. Drizzle with coconut oil; toss to combine. Arrange on parchment paper–lined baking sheet.
- Bake, stirring once, in preheated 350˚F (180˚C) oven for 15 to 18 minutes or until lightly toasted. Let cool completely.
- Add chocolate chips and dried blueberries to cereal mixture; toss well. Store in airtight container.
Tip: Use at least 70% dark chocolate chips.
